There's no last level. From level 512 every grid has ten words of up to ten letters, and the levels keep going.
No. The words are picked at random each time you open a level, so replaying it or pressing Restart gives a new grid of the same size.
The keyboard lights only the letters the remaining words use. As you find words, the letters they needed go dark, which narrows down what's left.
